i personally use ar wizard 3 to record...and acid pro to mix...

Yeh, Cool Edit Pro is now known as Adobe Audition, and it's like the best program out, in my opinion.

If PC, then go for Nuendo or Pro Tools. If Mac, then including these you have one more option Logic. But as far as I've worked with it. It's better for MIDI. Pro Tools wins in the mixing category. It's got a big learning curve. But work your ass off, you'll swallow it too. It's a lot similar to Cubase / Nuendo.
And about Audition, I'd prefer it if it was a little more low-latent and allowed the use of VSTi's.
